Researchers from the University of Bristol published a mathematical formula in 1999, which explained that a biscuit should dunk horizontally.A study called 'Physics takes the biscuit' reveals precisely why we are drawn to dunking biscuits in tea, as it seems more of the flavor of the biscuit is released into our mouths if it has first been dunked in a hot drink. The team from the University of Bristol led by Dr. Len Fisher calculated that up to 10 times more flavor is released this way than if the biscuit is eaten dry. Their two-month investigation also established the best strategy for dunking chocolate biscuits. The 'flat-on' approach requires the nibble to be immersed biscuit side down. This minimizes 'chocolate bleed' into the tea or coffee and keeps the coating rigid enough to prevent the biscuit from breaking in half.
