Kopi Luwak is made from coffee beans plucked from civets’ feces. It is the most expensive coffee in the world, with a cup costing up to US$80.Kopi Luwak is produced from beans that have been partially digested by a Civet cat, a catlike creature found in Southeast Asia and sub-Saharan Africa. It has been called one of the most expensive coffees globally, with retail prices reaching $100 per kilogram for farmed and $1,300 per kilogram for wild-collected beans.

Kopi Luwak is a form of processing rather than a variety of coffee. Civet cat's digestive enzymes change the protein structure in the coffee beans, which removes some of the acidity to make a smoother cup of coffee. Digestion removes all the fruit pulp that sometimes gets left while processing. The Civet is also a highly picky eater and will only eat the best, most ripe coffee cherries.

Kopi luwak was sold around $100 to $500 per pound in 2010. The price paid to collectors in the Philippines was closer to $20 per kilogram. Some specialty coffee shops sell cups of brewed kopi luwak for $35–80.
